I am having one of those horrible allergic reactions where the mind is saying “it’s still spring, it’s still spring”, but what the body actually is feeling is “summer”.
HOT. HUMID. BLAGH. SUMMER! Where its painfully hot here, Denver is expecting snow! In APRIL! Who shall we blame? Global Warming? Ekh.
So since its summer here already craving a cupcake really wasn’t helping. The thought of standing in front of the blazing oven and the blending and sweating just BLAH. ( see how maturely I express my feelings).
But what I am loving is the watermelons! Those yummy cold cold juicy red pieces of a heavenly summer that they show in movies, which I’ve never seen, but always get excited that this summer might be like those.
You know with lemon aid stands, kid riding bikes, playing in the yard with sprinklers etc. Ya, I day dream a lot.
Just like I always thought Christmas will be like the one Kevin had in New York in Home Alone. But I got super upset on Christmas when I was visiting my brother in law. Everything was closed! And no one came to meet us or bring us gifts 😦
Anyways, so its been hot and I’ve been lazy and ill so I thought lets make some easy drinks to cool those heads of ours. (We don’t want Mamma Hulk coming out). So since I was craving cupcakes, this had to be the best thing to make, Cupcake Milkshakes. Love, love, love it. It’s easy, yummy, and Chip enjoys blending the ingredients. And I get happy he’s having his dose of milk. Yes, the unhealthy way, but milk is milk. 😀
1/2 cup milk
2 TBS funfetti or plain white cake mix
1/4 cup canned vanilla frosting
1 cup vanilla ice cream
Sprinkles and whipped cream, for garnish
Layer ingredients in your blender as listed above (minus the sprinkles and whipped cream). Blend until frothy and well mixed. Pour into a glass and garnish with whipped cream and sprinkles.
Makes 1 large or 2 small shakes.

For those with a more mature taste bud, I also love this easy Pina Colada Recipe. I don’t know where its originally from, I just saw my mom make it. I don’t have exact measurements either, I just throw in everything like I feel right, but I’ll still try. You can change it according to your taste as well.
2 cups Sun Exotic Pineapple and Coconut Juice (available at Aghas Superstore); or any brand that has the combo.
1-2 scoops vanilla Ice cream
Milk – enough to get the consistency you desire.
Throw it all in the blender and let it whirl.
You can also add coconut shavings, but I like it neat and simple. And of course a cherry on the top!
So, ummm, I am starting to feel the sore throat might not be from the sun after all 😉
But NOW I am craving Ice lollies! Since I don’t like the chemical, colored filled ones you get in stores, I think a watermelon lolly with a hint of mint, and some honey to sweeten it would be a wonderful and healthy treat for Chip and I. *slurp*
And off to the kitchen I go!!
